  2. Wash the potatoes and prick them with a fork. Place them on a baking sheet and bake for 40 minutes or until tender.
  3. In the meantime, heat a large skillet over medium heat. Add the sliced mushrooms and sauté until they release their moisture and become golden brown. Remove from the skillet and set aside.
  4. In the same skillet, add the diced onion and sauté until translucent.
  5. Sprinkle the flour over the onions and stir well to combine. Cook for 1-2 minutes.
  6. Gradually whisk in the vegetable broth, ensuring there are no lumps.
  7. Stir in the paprika, Dijon mustard, salt, and black pepper. Cook for another 2-3 minutes until the sauce thickens.
  8. Remove the potatoes from the oven and let them cool slightly. Cut a slit lengthwise on each potato and gently push the ends to create an opening.
  9. Spoon the mushroom mixture into the potatoes, followed by the sauce.
  10. Top each potato with a dollop of sour cream and sprinkle with fresh parsley.
  11. Place the stuffed potatoes back in the oven for 5-10 minutes to heat through.
