  2. Peel and grate the potatoes.
  3. Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.
  4. In a bowl, combine the grated potatoes, salt, garlic powder, and Italian seasoning.
  5. Form small tots with the potato mixture and place them on a baking sheet lined with parchment paper.
  6. Bake the tots in the preheated oven for 20 minutes or until they are golden brown and crispy.
  7. Remove the tots from the oven and let them cool for a few minutes.
  8. Once the tots have cooled slightly, top each tot with a spoonful of pizza sauce, mozzarella cheese, and a slice of pepperoni.
  9. Heat olive oil in a frying pan over medium heat.
  10. Fry the tots in batches for 2-3 minutes on each side until the cheese is melted and bubbly.
  11. Remove the tots from the pan and place them on a paper towel-lined plate to drain any excess oil.
  12. Serve the pizza tots hot with additional pizza sauce for dipping.
