Pink Potato Salad
The pink color of this potato salad comes from the vibrant radicchio leaves used as a garnish.

Wash and peel the potatoes, then cut them into bite-sized pieces.

Bring a large pot of salted water to a boil and cook the potatoes for about 8-10 minutes, until they are fork-tender.

Drain the potatoes and let them cool.

In a large bowl, mix together the mayonnaise, apple cider vinegar, chopped red onion, chopped parsley, salt, and black pepper.

Add the cooled potatoes to the bowl and gently mix until they are well coated with the dressing.

Cover the bowl with plastic wrap and let the salad rest in the refrigerator for at least 30 minutes.

Just before serving, garnish the salad with sliced radishes, cress, and radicchio leaves.
