In a mixing bowl, combine the all-purpose flour, baking soda, and salt.

In a separate bowl, mix together the melted butter, granulated sugar, and brown sugar until well combined.

Add the egg and vanilla extract to the butter mixture and mix well.

Gradually add the flour mixture to the butter mixture, mixing until just combined.

Stir in the rolled oats, dried pineapple, and butterscotch chips.

Drop tablespoonfuls of dough onto a greased baking sheet.
