  2. In a saucepan, combine the sugar and water. Cook over medium heat, stirring continuously, until the sugar is completely dissolved and the mixture turns into a golden caramel color. Pour the caramel into the prepared baking dish, covering the bottom evenly.
  3. In a blender or food processor, blend the pineapple until smooth. Set aside.
  4. In a large mixing bowl, beat the cream cheese until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract, lemon juice, condensed milk, evaporated milk, and blended pineapple. Mix until well combined.
  5. Pour the mixture into the baking dish over the caramel sauce.
  6. Place the baking dish in a larger baking pan or roasting pan. Fill the larger pan with hot water, about halfway up the sides of the baking dish.
  7. Carefully transfer the pan to the preheated oven and bake for about 45 minutes, or until the flan is set around the edges but slightly jiggly in the center.
  8. Remove the flan from the oven and let it cool to room temperature. Then, refrigerate it for at least 2 hours, or overnight, to allow it to fully set.
