  2. In a large bowl, combine the flour, granulated sugar, ground mace, and salt.
  3. Cut the butter into small pieces and add it to the flour mixture. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
  4. Add the ice water, 1 tablespoon at a time, and mix until the dough comes together.
  5. Roll out the dough on a lightly floured surface to fit a 9-inch tart pan.
  6. Transfer the dough to the tart pan and press it into the bottom and sides.
  7. Arrange the pear slices on top of the dough in a decorative pattern.
  8. Brush the beaten egg over the pears and sprinkle with turbinado sugar.
