  4. Slice the nectarines and arrange them in the prepared shortbread cups.
  5. Bake in the preheated oven for 25 minutes, or until the shortbread cups are golden brown.
  6. Remove from the oven and let them cool in the muffin tin for 10 minutes.
  7. Carefully remove the shortbread cups from the muffin tin and let them cool completely on a wire rack.
  8. Serve the nectarine shortbread cups with whipped cream and garnish with fresh mint leaves.
