Baked Mini Cinnamon-Sugar Donut Muffins

Preheat the oven to 350°F (175°C) and grease a mini muffin tin.

In a large bowl, whisk together the flour, baking powder, salt, and cinnamon.

In a separate bowl, mix the melted butter and sugar until well combined. Add the egg, milk, and vanilla extract, and mix again.

Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean.

While the muffins are baking, prepare the coating by combining the melted butter, sugar, and cinnamon in a shallow bowl.

Remove the muffins from the oven and let them cool for a few minutes.

Dip each muffin into the melted butter, then roll it in the cinnamon-sugar mixture until coated.

Place the coated muffins on a wire rack to cool completely.
