  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese, peanut butter, sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the sour cream.
  4. Pour the cream cheese mixture over the crust in the springform pan. Sprinkle the chopped peanut butter cups on top.
  5. Bake for 55-60 minutes or until the center is set. Remove from the oven and let it cool in the pan for 10 minutes.
  6. Run a knife around the edge of the pan to loosen the cheesecake. Remove the sides of the springform pan and let the cheesecake cool completely.
  7. Place the cheesecake in the refrigerator and let it chill for at least 4 hours or overnight.
  8. Before serving, garnish with whipped cream and drizzle with chocolate sauce. Enjoy!
