  1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the egg and vanilla extract, and mix well.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  4. Press two-thirds of the dough into the bottom of the prepared baking dish. Spread the peanut butter evenly over the dough. Then spread the strawberry jelly on top of the peanut butter.
  5. Crumble the remaining dough over the jelly layer.
  6. Bake for 25 minutes, or until the top is golden brown.
  7. Allow the bars to cool in the baking dish for 30 minutes before cutting into squares.
  8. Serve and enjoy!
