Preheat the oven to 425°F (220°C).

In a saucepan, combine peaches, sugar, cornstarch, and lemon juice. Cook over medium heat until thickened, stirring occasionally. Set aside.

In a mixing bowl, beat heavy cream and vanilla extract until stiff peaks form. Set aside.

In a separate bowl, combine all-purpose flour, cornmeal, baking powder, and salt. Cut in cold unsalted butter until the mixture resembles coarse crumbs. Stir in orange zest.

Gradually add milk to the flour mixture, stirring until just combined. Do not overmix.

Turn the dough out onto a lightly floured surface and pat into a 1-inch thick rectangle. Cut into 6 squares.

Place the biscuits onto a baking sheet lined with parchment paper. Bake for 12-15 minutes or until golden brown.

Allow the biscuits to cool slightly, then split them in half horizontally.
