  1. In a mixing bowl, combine flour, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs.
  2. Gradually add cold water, a tablespoon at a time, and mix until the dough comes together.
  3. Divide the dough into two equal portions, shape into discs, and wrap in plastic wrap. Refrigerate for 30 minutes.
  4. Preheat the oven to 400°F (200°C).
  5. On a lightly floured surface, roll out one portion of the dough into a circle, about 1/8 inch thick.
  6. Transfer the rolled-out dough onto a baking sheet lined with parchment paper.
  7. Repeat the rolling process with the second portion of the dough.
  8. Add your desired filling to one of the rolled-out dough circles.
  9. Carefully place the second dough circle on top of the filling.
  10. Press the edges of the dough together to seal.
  11. Use a fork to create decorative indentations around the edge of the pastry.
  12. Cut a few slits on the top crust to allow steam to escape.
  13. Bake in the preheated oven for 25 minutes or until golden brown.
  14. Allow the pastry to cool for a few minutes before serving.
