In a large bowl, mix together the flour, milk, eggs, and salt until smooth.

Heat a non-stick frying pan over medium heat and brush with olive oil.

Pour a small amount of batter into the pan and swirl to coat the bottom.

Cook for 2-3 minutes until the edges start to brown.

Flip the pancake and cook for another 1-2 minutes.

Remove the pancake from the pan and repeat with the remaining batter.

In a separate pan, sauté the spinach until wilted.

Place a spoonful of spinach filling on one half of each pancake.
