Preheat the grill or fire pit to medium heat.

Slice the potatoes into thin rounds.

In a saucepan, melt the butter and sauté the garlic until fragrant.

In a greased cast-iron skillet, layer half of the potato slices.

Sprinkle half of the cheddar cheese, salt, pepper, and fresh thyme over the potatoes.

Repeat the layers with the remaining ingredients.

Pour the heavy cream over the top layer.

Cover the skillet with foil and place it over the fire.

Cook for 45-60 minutes, or until the potatoes are tender.

Remove the foil and cook for an additional 10 minutes to brown the top.
