Gradually whisk in the chicken broth, beer, Dijon mustard, Worcestershire sauce, salt, and black pepper.

Bring the mixture to a simmer and cook for 15 minutes, stirring occasionally.

Reduce the heat to low and stir in the heavy cream, cheddar cheese, and Monterey Jack cheese until melted and smooth.

Serve the soup hot, garnished with green onions.
