Boil the potatoes until they are cooked through. Peel and mash them.

In a mixing bowl, combine the mashed potatoes, green chilies, fresh coriander, grated ginger, cumin powder, coriander powder, red chili powder, turmeric powder, and salt. Mix well.

In a separate bowl, knead the whole wheat flour with water to make a soft dough. Divide the dough into equal-sized balls.

Take a dough ball and roll it into a small circle. Place a portion of the potato mixture in the center and fold the edges of the dough to seal the filling.

Roll out the stuffed dough ball into a flatbread, taking care not to break it.

Heat a tawa or griddle over medium heat and cook the paratha on both sides until golden brown, applying ghee or oil as needed.

Repeat the process for the remaining dough balls.

Serve the hot aloo parathas with yogurt, pickle, or any side dish of your choice.
