  1. In a bowl, cream together the butter and granulated sugar.
  2. Add the egg yolks and vanilla extract, and mix well.
  3. Gradually add the flour and ground almonds, and mix until the dough comes together.
  4. Divide the dough into two portions, wrap in plastic wrap, and refrigerate for 30 minutes.
  5. Preheat the oven to 180°C (350°F).
  6. Roll out one portion of the dough and line a greased tart pan with it.
  7. Spread the raspberry jam over the dough.
  8. Roll out the remaining dough and cut into strips. Arrange the strips in a lattice pattern over the jam.
  9. Beat the egg whites until stiff peaks form, then spread over the lattice.
  10. Bake for 40 minutes, or until golden brown.
  11. Allow the torte to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  12. Dust with powdered sugar before serving.
