Morning Glory Muffins were first created in the 1970s by Chef Pam McKinstry for her Morning Glory Café on Nantucket Island.

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, combine oats, flour, baking powder, cinnamon, and salt.
  3. Add grated carrots, chopped apple, raisins, walnuts, and coconut flakes to the bowl. Mix well.
  4. In a separate bowl, whisk together eggs, vegetable oil, honey, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients. Stir until just combined.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  9. Serve and enjoy!
