Nutty Almond, Raspberry Jam and Apricot Granola Bars

Preheat the oven to 350°F (175°C). Line a baking pan with parchment paper.

In a food processor, pulse the almonds, rolled oats, and dried apricots until finely chopped.

In a small saucepan, heat the raspberry jam, honey, coconut oil, vanilla extract, and salt over low heat until melted and well combined.

Pour the jam mixture over the almond-oat mixture in the food processor and pulse until everything is well combined.

Transfer the mixture to the prepared baking pan and press it down firmly to create an even layer.

Bake for 20-25 minutes, or until golden brown.

Remove from the oven and let it cool completely in the pan.

Once cooled, lift the granola slab out of the pan using the parchment paper and cut it into bars.

Allow the bars to rest for at least 1 hour before serving.
