Not Your Mama’s Zucchini Bread
Zucchini bread became popular in the United States during the 1960s and 1970s as a way to use up excess zucchini from home gardens.

Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.

Grate the zucchini and squeeze out any excess moisture.

In a large bowl, combine the grated zucchini, flour, sugar, vegetable oil, eggs, vanilla extract, baking powder, baking soda, cinnamon, and salt. Mix well.

If desired, fold in walnuts and raisins.

Pour the batter into the prepared loaf pan.

Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

Slice and serve.
