Non-Traditional Christmas Cake – No Cherries
Traditional Christmas cakes often contain cherries, but this non-traditional version swaps them out for dried cranberries, apricots, and golden raisins for a unique twist on the classic holiday dessert.

Preheat the oven to 350°F (175°C) and grease a 9-inch (23 cm) round cake pan.

In a medium bowl, combine the flour, baking powder, and salt. Set aside.

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

Beat in the eggs, one at a time, followed by the vanilla extract.

Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.

Fold in the dried cranberries, chopped apricots, golden raisins, chopped walnuts, orange zest, and orange juice.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cake cool in the pan for 10 minutes.

Transfer the cake to a wire rack and let it cool completely.

Once cooled, dust the top of the cake with powdered sugar.
