  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the all-purpose flour, granulated sugar, unsalted butter, egg yolks, vanilla extract, salt, ground cinnamon, and lemon zest. Mix until the dough comes together.
  3. Roll out the dough on a floured surface to fit a 9-inch tart pan. Press the dough into the pan and trim any excess.
  4. Spread the almond flour evenly over the bottom of the tart crust.
  5. Peel and slice the pears. Arrange the pear slices over the almond flour.
  6. In a small saucepan, heat the apricot jam until melted. Brush the melted jam over the pear slices.
  7. Bake the tart in the preheated oven for 40 minutes, or until the crust is golden brown.
  8. Allow the tart to cool for 15 minutes before serving.
