Preheat the oven to 325°F (163°C). Line a baking sheet with parchment paper.

In a large bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and orange zest. Mix well.

Using a cookie scoop or tablespoon, drop rounded mounds of the coconut mixture onto the prepared baking sheet.

Press a small amount of chopped maraschino cherries onto the top of each macaroon.

Bake for 12-15 minutes, or until the edges are golden brown.

Remove from the oven and let the macaroons cool on the baking sheet for 10 minutes.

Transfer the macaroons to a wire rack to cool completely.
