  2. Roll out the puff pastry and cut it into circles to fit the tartlet molds.
  3. Place the puff pastry circles into the molds and press them gently.
  4. In a pan, heat the olive oil and sauté the mushrooms until they release their moisture and turn golden brown.
  5. Add the fresh rosemary, salt, and black pepper to the mushrooms and cook for another minute.
  6. Spoon the mushroom mixture into the tartlet molds.
  7. Crumble the goat cheese on top of the mushrooms.
  8. In a small bowl, beat the egg and brush it over the edges of the puff pastry.
