Mushroom Burgers With Almonds and Spinach
Mushrooms are a great source of umami flavor and can be used as a delicious meat substitute in vegetarian dishes.

Finely chop the mushrooms, almonds, onion, and garlic.

In a pan, heat 1 tablespoon of olive oil and sauté the chopped onion and garlic until translucent.

Add the chopped mushrooms and cook until they release their moisture and become tender.

In a mixing bowl, combine the cooked mushrooms, almonds, spinach, breadcrumbs, egg, salt, and black pepper. Mix well.

Form the mixture into patties of desired size.

Heat the remaining tablespoon of olive oil in a pan or grill pan.

Cook the mushroom burgers for about 4-5 minutes on each side, until they are golden brown and cooked through.

Toast the burger buns.

Assemble the burgers by placing a lettuce leaf, tomato slice, and mushroom patty on each bun.

Spread mayonnaise on the top bun and cover the burger.
