Preheat the grill to medium-high heat.

Remove the stems from the portobello mushrooms and brush them with olive oil.

Season the mushrooms with salt and black pepper.

Grill the mushrooms for about 5-7 minutes on each side, until tender.

Place a slice of Swiss cheese on each mushroom and continue grilling for another minute, until the cheese melts.

Toast the burger buns on the grill for a minute.

Spread mayonnaise and mustard on the bottom bun.

Top with lettuce, tomato slices, red onion slices, and the grilled mushroom with melted cheese.
