  1. Preheat the oven to 180°C (350°F).
  2. Slice the eggplants into 1 cm thick rounds. Sprinkle them with salt and let them sit for 10 minutes to remove any bitterness.
  3. Rinse the eggplant slices and pat them dry.
  4. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the eggplant slices and cook for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.
  5. In the same skillet, add the diced onion and minced garlic. Sauté until the onion becomes translucent.
  6. Add the chopped tomatoes, chickpeas, parsley, salt, black pepper, ground cumin, and ground coriander. Cook for 5 minutes until the tomatoes soften.
  7. In a baking dish, arrange a layer of eggplant slices followed by a layer of the tomato-chickpea mixture. Repeat the layers until all the ingredients are used.
  8. Drizzle the remaining olive oil on top.
  9. Cover the baking dish with aluminum foil and bake for 30 minutes.
  10. Remove the foil and bake for an additional 10 minutes until the top is golden brown.
  11. Let it rest for 10 minutes before serving.
