  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, whisk the eggs with salt and black pepper.
  3. Heat olive oil in a skillet over medium heat. Sauté spinach, cherry tomatoes, and mushrooms until softened.
  4. Divide the sautéed vegetables evenly among 4 greased ramekins.
  5. Pour the whisked eggs over the vegetables in the ramekins.
  6. Sprinkle cheddar cheese on top.
  7. Place the ramekins on a baking sheet and bake for 15-20 minutes, or until the eggs are set.
  8. Remove from the oven and let cool for a few minutes before serving.
