Preheat the oven to 375°F (190°C).

In a bowl, whisk the eggs with salt and black pepper.

Heat olive oil in a skillet over medium heat. Sauté spinach, cherry tomatoes, and mushrooms until softened.

Divide the sautéed vegetables evenly among 4 greased ramekins.

Pour the whisked eggs over the vegetables in the ramekins.

Sprinkle cheddar cheese on top.

Place the ramekins on a baking sheet and bake for 15-20 minutes, or until the eggs are set.

Remove from the oven and let cool for a few minutes before serving.
