Smoked Gouda Scones
Scones originated in Scotland and were traditionally made with oats and baked on a griddle.

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a large bowl, combine the flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.

Stir in the grated smoked Gouda cheese and chopped fresh chives.

In a separate bowl, whisk together the egg and milk. Add the egg mixture to the dry ingredients and stir until just combined.

Turn the dough out onto a floured surface and gently knead a few times until it comes together. Pat the dough into a circle about 1 inch thick.

Using a sharp knife, cut the dough into 8 wedges. Transfer the wedges to the prepared baking sheet.

Bake for 15-20 minutes, or until the scones are golden brown and cooked through.

Remove from the oven and let the scones cool on a wire rack for 10 minutes before serving.
