  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg yolks, vanilla extract, peppermint extract, and green food coloring (optional).
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Shape the dough into 1-inch balls and place them on the prepared baking sheet. Use your thumb or the back of a teaspoon to make an indentation in the center of each ball.
  6. Bake for 10-12 minutes or until set. Remove from oven and immediately reshape the indentations if needed.
  7. In a microwave-safe bowl, combine the chopped chocolate and sweetened condensed milk. Microwave in 20-second intervals, stirring in between, until melted and smooth.
  8. Spoon the chocolate mixture into the indentations of the cookies. Sprinkle crushed candy canes on top.
  9. Allow the cookies to cool and the chocolate to set before serving.
