  1. Preheat the oven to 250°F (120°C). Line a baking sheet with parchment paper.
  2. Pop the popcorn kernels according to the package instructions.
  3. In a saucepan, melt the butter over medium heat. Stir in the brown sugar, corn syrup, and salt. Bring the mixture to a boil, stirring constantly.
  4. Remove the saucepan from the heat and stir in the baking soda and vanilla extract. The mixture will bubble up, so be careful.
  5. Pour the caramel mixture over the popcorn and toss until all the popcorn is coated.
  6. Spread the caramel-coated popcorn onto the prepared baking sheet and bake for 45 minutes, stirring every 15 minutes.
  7. Remove the caramel corn from the oven and let it cool on the baking sheet for 15 minutes.
  8. Break the caramel corn into smaller pieces and serve.
