Butternut Squash and Sage Latkes
Latkes are traditionally served during Hanukkah to commemorate the miracle of the oil that lasted eight days.

Grate the butternut squash and onion, then squeeze out any excess moisture.

In a large bowl, combine the grated squash, onion, sage leaves, egg, matzo meal, salt, and pepper.

Heat the olive oil in a frying pan over medium heat.

Form small patties from the squash mixture and place them in the pan.

Cook until golden brown on both sides, about 4-5 minutes per side.

Remove the latkes from the pan and place them on a paper towel to drain excess oil.

Serve hot with applesauce or sour cream.
