Gingerbread Truffles
Gingerbread has been enjoyed for centuries and is traditionally associated with holiday celebrations, particularly Christmas.

In a food processor, pulse the gingersnap cookies until finely crushed.

In a mixing bowl, combine the crushed cookies, cream cheese, powdered sugar, ginger, cinnamon, nutmeg, and vanilla extract. Mix until well combined.

Roll the mixture into small truffle-sized balls and place them on a baking sheet lined with parchment paper.

Place the baking sheet in the refrigerator and let the truffles rest for at least 1 hour.

In a microwave-safe bowl, melt the white chocolate in 30-second intervals, stirring in between, until smooth.

Dip each truffle into the melted white chocolate, coating it completely. Place the coated truffles back on the baking sheet.

Dust the truffles with a sprinkle of ground cinnamon.

Place the baking sheet back in the refrigerator and let the chocolate set for about 10 minutes.

Once set, remove the truffles from the refrigerator and serve.
