Carrot-Zucchini Loaves
Carrots and zucchini are both excellent sources of vitamins and minerals, making this dish a nutritious choice for a snack or breakfast.

Preheat the oven to 350°F (175°C). Grease and flour two 9x5-inch loaf pans.

In a large bowl, combine the grated carrots, zucchini, flour, baking powder, salt, cinnamon, and nutmeg.

In a separate bowl, beat the eggs, sugar, oil, and vanilla extract until well combined.

Fold the wet ingredients into the dry ingredients until just combined. Stir in the walnuts.

Divide the batter evenly between the prepared loaf pans.

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the loaves cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.
