  1. Preheat the oven to 325°F (163°C). Crush the chocolate cookies in a food processor and mix with melted butter. Press the mixture into the bottom of a springform pan.
  2. In a large bowl, beat cream cheese, sugar, vanilla extract, mint extract, and green food coloring until smooth. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  3. Pour the mixture over the crust in the springform pan. Smooth the top with a spatula. Bake for 60 minutes, then turn off the oven and let the cheesecake rest in the oven for 4 hours.
  4. Melt the dark chocolate and drizzle it over the cooled cheesecake. Refrigerate for at least 2 hours.
  5. Before serving, garnish with whipped cream, mint leaves, and chocolate shavings.
