Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking soda, and salt.

In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg, vanilla extract, and maple syrup.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chopped pecans.

Take a tablespoon of dough and flatten it in your palm. Place a caramel candy in the center and fold the dough around it, sealing it completely. Repeat with the remaining dough and caramel candies.

Place the filled cookie dough balls onto the prepared baking sheet, spacing them apart. Bake for 10-12 minutes or until golden brown.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes. Transfer to a wire rack to cool completely.
