Preheat the oven to 375°F (190°C).

In a large bowl, combine cherries, sugar, cornstarch, lemon juice, and vanilla extract. Stir until well coated.

Roll out one pie crust and place it in a 9-inch pie dish. Trim the edges.

Pour the cherry filling into the pie crust.

Cut the second pie crust into strips and create a lattice pattern on top of the cherry filling.

Brush the lattice with beaten egg and sprinkle with granulated sugar.

Bake for 45 minutes or until the crust is golden brown and the filling is bubbly.
