  2. In a large bowl, combine cherries, sugar, cornstarch, lemon juice, and vanilla extract. Stir until well coated.
  3. Roll out one pie crust and place it in a 9-inch pie dish. Trim the edges.
  4. Pour the cherry filling into the pie crust.
  5. Cut the second pie crust into strips and create a lattice pattern on top of the cherry filling.
