  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, cream together the butter and sugar until light and fluffy. Add the egg and vanilla extract, and mix well.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
  5. Fold in the shredded coconut.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the muffins cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
  9. Once the muffins are cool, drizzle caramel sauce over the tops.
  10. Melt the chocolate chips in the microwave or on the stovetop, and drizzle over the caramel.
  11. Allow the chocolate to set before serving.
