Fruit tarts have been enjoyed for centuries and are believed to have originated in ancient Persia.

In a large mixing bowl, combine the all-purpose flour, cold butter, granulated sugar, egg, vanilla extract, and salt. Mix until the dough comes together.

Shape the dough into a ball, cover it with plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 375°F (190°C).

On a lightly floured surface, roll out the chilled dough to about 1/8 inch (3 mm) thickness.

Cut out twelve circles using a round cookie cutter or the rim of a glass. Transfer the circles to a baking sheet lined with parchment paper.

Prick the dough circles with a fork to prevent them from puffing up during baking.

Bake for 12-15 minutes, or until golden brown. Let the tart shells cool completely.

Fill each tart shell with assorted fresh fruits.

Dust the tarts with powdered sugar and garnish with fresh mint leaves.
