  1. In a large mixing bowl, combine the all-purpose flour, cold butter, granulated sugar, egg, vanilla extract, and salt. Mix until the dough comes together.
  2. Shape the dough into a ball, cover it with plastic wrap, and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. On a lightly floured surface, roll out the chilled dough to about 1/8 inch (3 mm) thickness.
  5. Cut out twelve circles using a round cookie cutter or the rim of a glass. Transfer the circles to a baking sheet lined with parchment paper.
  6. Prick the dough circles with a fork to prevent them from puffing up during baking.
  7. Bake for 12-15 minutes, or until golden brown. Let the tart shells cool completely.
  8. Fill each tart shell with assorted fresh fruits.
  9. Dust the tarts with powdered sugar and garnish with fresh mint leaves.
