Eclairs were first made in France during the 19th century and were initially called ‘pain à la duchesse’ or ‘petite duchesse’.

Preheat the oven to 400°F (200°C).

In a saucepan, combine water, butter, and salt. Bring to a boil.

Remove from heat and add flour. Stir until the mixture forms a ball.

Transfer the mixture to a mixing bowl and let it cool slightly.

Add eggs, one at a time, beating well after each addition until smooth.

Transfer the dough to a piping bag fitted with a large round tip.

Pipe 3-inch long strips onto a lined baking sheet.

Bake for 20-25 minutes or until golden brown.

Remove from the oven and let the eclairs cool completely.

In a microwave-safe bowl, melt the chocolate and cream together.

Dip the top of each eclair into the chocolate mixture.

In a separate bowl, whisk together powdered sugar, vanilla extract, and a pinch of salt.

Drizzle the glaze over the chocolate-dipped eclairs.

Let the glaze set for 10 minutes before serving.
