  2. Add the vanilla extract and mix until the dough comes together.
  3. Divide the dough into 4 equal portions and shape each portion into a disk. Wrap in plastic wrap and refrigerate for 1 hour.
  4. Preheat the oven to 350°F (175°C).
  5. On a lightly floured surface, roll out each disk into a 1/8-inch thick circle.
  6. Sprinkle each circle with chocolate chips, dried cherries, and chopped walnuts.
  7. Cut each circle into 8 wedges.
  8. Starting from the wide end, roll up each wedge tightly. Place the rugelach on a baking sheet lined with parchment paper.
  9. Brush each rugelach with beaten egg.
  10. Bake for 20 minutes or until golden brown.
