  2. In a bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a lined muffin tin, creating a crust.
  3. In a separate bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, mixing well after each addition.
  4. Pour the cream cheese mixture over the crust in the muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes or until the cheesecakes are set.
  6. Remove from the oven and let cool in the muffin tin for 5 minutes. Then, transfer the cheesecakes to a wire rack to cool completely.
  7. Once cooled, top each mini cheesecake with cherry pie filling.
  8. Refrigerate for at least 1 hour before serving. Enjoy!
