  1. Preheat the oven to 350°F (175°C). Grease a mini bundt pan.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon.
  3. In a separate bowl, mix together the milk, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the diced apples.
  6. In a small bowl, mix together the brown sugar and melted butter.
  7. Spoon the brown sugar mixture into the bottom of each mini bundt pan cavity.
  8. Spoon the batter on top of the brown sugar mixture, filling each cavity about 2/3 full.
  9. Bake for 20-25 minutes, or until golden brown and cooked through.
  10. Allow the monkey bread to cool in the pan for 10 minutes, then invert onto a serving plate.
  11. Serve warm and enjoy!
