Preheat the oven to 350°F (175°C). Line a 9x9-inch baking dish with parchment paper.

In a food processor, combine the all-purpose flour, granulated sugar, cold unsalted butter, salt, Meyer lemon zest, and Meyer lemon juice. Pulse until the mixture resembles coarse crumbs.

Press the mixture evenly into the prepared baking dish.

Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown.

Remove from the oven and let it cool in the baking dish for 10 minutes.

Lift the bars out of the baking dish using the parchment paper and transfer to a wire rack to cool completely.

Once cooled, dust the bars with powdered sugar.

Cut into squares and serve.
