Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Place the matzo sheets on the prepared baking sheet, breaking them into smaller pieces if necessary.

In a small saucepan, melt the butter over low heat. Add the sugar and cook for 2 minutes, stirring constantly.

Pour the sugar mixture over the matzo and spread it out evenly.

Sprinkle the sliced almonds and sea salt over the top.

Bake for 10 minutes, or until the sugar has melted and the matzo is golden.

Remove from the oven and let cool for 5 minutes.

In a small saucepan, heat the vanilla extract and baking soda over low heat. Stir until the mixture becomes frothy.

Pour the frothy mixture over the matzo and quickly spread it out to cover the surface.

Let cool completely, then break into pieces.
