  3. Add chopped onion and minced garlic, sauté until translucent.
  4. Add sliced mushrooms, paprika, cumin, salt, and black pepper. Cook until mushrooms are tender and any liquid has evaporated.
  5. Roll out the puff pastry and cut circles using a round cutter.
  6. Spoon the mushroom mixture onto one half of each pastry circle.
  7. Fold the pastry over the filling to create a half-moon shape.
  8. Press the edges with a fork to seal.
  9. Place the empanadas on a baking sheet lined with parchment paper.
  10. Brush the empanadas with beaten egg.
  11. Bake in the preheated oven for 15-20 minutes, or until golden brown.
  12. Allow to cool for a few minutes before serving.
