Add sliced mushrooms, paprika, cumin, salt, and black pepper. Cook until mushrooms are tender and any liquid has evaporated.

Roll out the puff pastry and cut circles using a round cutter.

Spoon the mushroom mixture onto one half of each pastry circle.

Fold the pastry over the filling to create a half-moon shape.

Press the edges with a fork to seal.

Place the empanadas on a baking sheet lined with parchment paper.

Brush the empanadas with beaten egg.
