The Mont Blanc dessert got its name from the resemblance of the piped chestnut puree on top to the snow-capped Mont Blanc mountain in the French Alps.

  1. Preheat the oven to 180°C and prepare the cake base.
  2. In a mixing bowl, whisk the heavy cream until it forms soft peaks. Add the white chocolate and matcha powder, and continue whisking until it forms stiff peaks.
  3. Place the sponge cake on a serving plate and spread a layer of adzuki bean paste on top. Place the matcha chocolate cream on top of the adzuki bean paste.
  4. In a separate bowl, mix the chestnut puree with whipped cream to form the Mont Blanc topping. Spread the Mont Blanc topping on top of the matcha chocolate cream.
  5. Dust the top of the cake with unsweetened cocoa powder.
  6. Refrigerate the cake for at least 1 hour before serving.
  7. Slice and serve the Matcha Chocolate Adzuki Mont Blanc Shortcake.
