  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a greased 9x9-inch baking dish.
  3. In a large bowl, beat the cream cheese, granulated sugar, lemon zest, lemon juice, and vanilla extract until smooth.
  4. Add the eggs one at a time, beating well after each addition.
  5. Gradually add the flour and mix until just combined.
  6. Pour the cream cheese mixture over the crust in the baking dish.
  7. Bake for 25-30 minutes or until the edges are set and the center is slightly jiggly.
  8. Remove from the oven and let cool to room temperature.
  9. Refrigerate for at least 2 hours or until chilled.
  10. Sprinkle with powdered sugar before serving.
