  1. In a large mixing bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  2. In a small saucepan, heat the milk until warm. Remove from heat and sprinkle the yeast over the milk. Let it sit for 5 minutes.
  3. In a separate bowl, beat the egg yolks. Add the yeast mixture and mix well. Pour the wet ingredients into the dry ingredients and mix until a soft dough forms.
  4. Turn the dough onto a floured surface and knead for 5 minutes. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour.
  5. Preheat the oven to 350°F (175°C). Roll out the dough into a rectangle.
  6. In a small bowl, mix together the cinnamon, nutmeg, chopped walnuts, and powdered sugar. Spread the mixture evenly over the dough.

  9. In a small bowl, mix together the powdered sugar, vanilla extract, and lemon juice. Drizzle the glaze over the cooled nut roll.
