  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the flour, ground ginger, and salt for the crust.
  3. Add the cold cubed butter and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
  4. Gradually add the ice water, 1 tablespoon at a time, and mix until the dough comes together.
  5. Divide the dough in half and shape each half into a rectangle. Wrap in plastic wrap and refrigerate for 30 minutes.
  6. In a separate bowl, combine the sliced apples, blueberries, granulated sugar, cornstarch, ground cinnamon, and lemon juice for the filling. Mix until well combined.
  7. Roll out one of the dough rectangles on a lightly floured surface to fit a 9x13-inch (23x33 cm) baking dish.
  8. Transfer the rolled-out dough to the baking dish, pressing it into the bottom and up the sides.
  9. Pour the apple-blueberry filling over the crust and spread it out evenly.
  10. Roll out the second dough rectangle and place it on top of the filling.
  11. Trim the excess dough and crimp the edges to seal.
  12. Make a few small slits on the top crust to allow steam to escape.
  13. Brush the top crust with melted butter and sprinkle with granulated sugar.
  14. Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  15. Remove from the oven and let it cool for at least 1 hour before serving.
  16. Serve warm or at room temperature.
